There is lots of scope to be nerdy in whisky and Ailsa Bay have definitely found their niche. They are the first distillery to measure SPPM which is ‘sweet parts per million’ and to use micro-maturation. This involves maturing the whisky in particularly small Hudson Bay bourbon casks before moving them into virgin oak, first fill and refill casks. With a capacity of 12m litres, they are a bit of an unknown powerhouse.
