Daftmill Distillery

Daftmill is one of, if not the only self sustaining distillery in Scotland. The barley used is grown on the surrounding fields, the warm water is either reused in mashing or sent into the local duck pond and all bi-products are used in the farm. The distillery works in sync with the farm, when it’s time for planting barley, potatoes and other agriculture the distillery falls silent. On the other hand, when farming duties quieten down, that is when the whisky is produced.
