Dornoch distillery sits in the old fire station on the grounds of a former castle. They are one of the smallest distilleries in Scotland with a capacity of around 30,000LPA. This does however allow them to be as experimental as they like. The use of traditional barley strains and different yeast types allows the distillery to create intense and distinctive flavours.
