Holyrood was the first distillery to open in Edinburgh in modern times. They are a very experimental distillery and use a variety of malts and yeast types to create their flavour, this includes chocolate malt, wine yeast and champagne yeast. Their courtyard is the perfect social space and visitors are welcome to sit out and enjoy some of their handcrafted gin made on sight.
