Lindores Abbey sits on the grounds of the first written reference of scotch whisky dating back to 1494. They have built the distillery using locally sourced stone and wood. Instead of producing gin like most other new distilleries, Lindores Abbey have put aside some of its spirit to produce Aqua-vitae. This is mixed with local herbs and spices grown near the River Tay.
