Scapa is one of two distilleries on the Isle of Orkney, the other being the better known Highland Park. They used to have the longest fermentation time of any distillery, although since then they have reduced it due to a 7 day distilling week. Scapa use a Lomond still to produce their whisky, being the only distillery to do so.
